Vineyard The Estate Vineyard at Dixons Creek. The average vine age is 27 years. MV6, 667 and 777 Clones.
Season Late season, lots of perfume and charm, small crops and good fruit concentration.
Tasting Note Medium dark in colour. Alluring red fruit aromatics, charcuterie and spice. Elegant, plump, minerally, fine tannin, soft acidity.
Suggested Cuisine Charcoal grilled Peri Peri chicken.
General Characteristics Medium Dry / Medium bodied
Winemaking Fruit was hand harvested and hand sorted. A combination of whole berry and whole bunch (~15%) is tipped into open fermenters. Then 15-18 days of maceration and fermentation with wild yeast. The wine is then pressed, settled overnight and filled to barrel by gravity. Allowed to mature for 9 months at 16°C in 225L French casks.

Cellaring The wine will continue to develop complexity and interest with good cellaring for 4-6 years.
