All fruit at Warramate is hand-picked and once delivered to the winery placed in a cool room overnight. Processing the following day a series of bunch ferments and whole berry ferments are employed. All in open fermenters of 600kg to 2000kg. Hand plunging for gentle extraction and gently pressed. Maturation time in barrel was 15 months prior to bottling. 100% French oak, utilizing a mixture of hogsheads and barriques, only 20% new barrels.
Perfume and ripe plum notes entwined with licorice spice elements. A medium-bodied style reflecting its’ cool-climate origins. Carbonic fermentation gives the wine a juicy fruit core and a lightness on the palate. A gentle framework on tannins supporting the fruit.
Varietals: 100% Shiraz
Region: Yarra Valley (Gruyere)
Vineyard: Warramate, elevation 160 to 180 metres AMSL. Sitting at the foot of the Warramate Hills on a gentle north facing slope.
Vines: The grapes that make up this wine are a blend of the 1969 “old vine” plantings and the 2000 “young vine” plantings. The young vines are four distinct Shiraz clones (BVRC12, SA1127, 1654, ESA3021). The balance being the old vine and is an unknown clone. All Warramate vines are farmed without irrigation.
Soil: Silty clay loam over yellow clay
Cellaring: Given the freshness & immediacy of expression it currently displays, it is ready for enjoyment right now. Expect a graceful & satisfying evolution for 10+ years under suitable cellaring conditions.
